I'm always looking for something new to do in the kitchen, and when I recently found something I like, I wanted to share it. I've always made a chicken spaghetti, but this gives it a little kick and some variety. It's very easy and yummy!
1 can of Ro-Tel tomatoes (I added more to make it spicier!)
2 cans of cream of chicken soup
1 box of thin spaghetti noodles
3 chicken breasts diced
1 box of Velveeta cheese (diced into cubes)
1. Boil or saute the chicken.
2. Boil and drain spaghetti noodles.
3. Mix cream of chicken soup, velveeta cheese, and Ro-Tel tomatoes. Microwave until cheese is melted.
4. Mix with chicken and noodles.
5. Pour into a 13x9 Pyrex baking dish.
6. Bake in 350 degree oven for 20 minutes.
7. Serve with crescent rolls and salad.
Credit for this recipe goes to Mrs. Ann Self, my WONDERFUL principal. She made lunch for us the other day and it was delicious! I don't know if this is the EXACT recipe, but I think it's close!
